These waffles are a favorite around here. All four boys, Mike, and I down them every time. You would never guess that they are healthy. Of course, they are still full of carbs, so don't confuse healthy with "diet" food. By healthy I mean they are made with whole foods, so no additives, preservatives, or words you can't pronounce. ;)

Tofu.
Yep. I put tofu in my waffles, and you know what? If I didn't tell you, you would never, ever know.
Cooking at our house these days includes trying to avoid tripping over these little cuties:
The best part of waffle making:
Recipe:
1.5 cups wheat berries or 2 cups whole wheat flour
1/4 cup flax seeds or flax seed meal
1/4 cup wheat germ
1 tablespoon baking powder
1 teaspoon salt
2 cups almond milk
2 large eggs, beaten
2 tablespoons honey
4 ounces soft tofu
Combine dry ingredients and set aside.
Blend wet ingredients we use a Vitamix.
Combine wet and dry ingredients.
If you have a Vitamix or comparable brand, turn the variable speed to low and combine in the blender, otherwise I recommend combining by hand.
Allow batter to sit 5-10 minutes before cooking.
I turn on the waffle maker once the batter is mixed. By the time it has preheated, the timing is just about right.
Cook in a waffle maker.
I set the timer for four minutes, and it turns out just right in our machine. This could vary from brand to brand.
Serve with whatever toppings your family prefers.
We like bananas and pure maple syrup.
