Go RED for Women {Heart Healthy Breakfast Recipe}

This month I am partnering with a group of fab bloggers to spread the word about Go RED for Women.  Heart disease is the number one killer of women in the United States, and Go RED for Women is all about spreading the word.

To prevent heart disease and stay healthy we have been making positive changes with what we eat.  We have drastically reduced the amount of dairy we eat, and we avoid refined sugars.  I want to be around to see my boys grow up, and I want them to be strong and healthy.  Today I am sharing a favorite breakfast recipe we enjoy as a family.



The recipe is simple.  Combine all the ingredients and bake!  It really couldn't be more easy.  For Valentine's Day and in honor of going RED I added red food coloring to the mixture.


J-Bug (3) helped me mix the ingredients, and he happily licked the beater while I poured the batter into a heart shaped silicone mold.  I found mine at Target.  Here is an option available on Amazon.



This heart mold is the first silicone bake-ware I have ever used, so I did a quick Google search for some great info on baking with silicone.  I found this booklet.  A few important tips included adding a few extra minutes of bake time to recipes, and keeping silicone below the middle of the oven.  I moved my rack down before putting the pan in the oven.




The recipe:
  • 3/4 cup coconut or almond milk
  • 2 tablespoons melted butter
  • 1 large egg
  • 1 tablespoon honey
  • 1/2 cup flour
  • 1/2 cup whole wheat flour
  • 1/8 cup flax seed meal
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt


Combine ingredients and pour into mold or dish of your choice.  Bake for 25 minutes* at 350 degrees.

*It was closer to 30 minutes in the silicone mold.

This recipe can also be used to make traditional pancakes or poured into a square baking dish and baked like a cake.  We love to bake it in a round cake pan and call it pancake pie.



I topped the pancake muffins with freshly made coconut milk whipped cream.  I followed the recipe found at Family Fresh Cooking.  I added cinnamon and honey to ours, and it was the perfect topping for these pancake muffins.  Note:  You need to refrigerate the coconut milk overnight to make this, so plan ahead!  I have read that Thai coconut milk is the best brand.  I haven't tried others, so I can't compare.
